Has it really been a year already?
Yeah, doesn’t quite seem like it, but it’s now been a year since Christy and I walked down the aisle in some fancy clothes.
Leading up to the day, we’d often think about what we were doing a year ago. Visiting venues, and making spreadsheets. Laboring over handmade invitations. Practicing our First Dance. Trying out CoolHaus Sammies for the first time
It was quite a year, but we were more than satisfied with how it all turned out in the end.
This year has brought itself some fun and exciting things and the cool thing about blogging is all I have to do is click back through my posts to remember all we’ve done. Honeymoon in Spain. Trips to San Antonio, Corpus Christi, Atlanta, and Chicago. Family Reunions. Fun Holidays. Lots of House work. Great times with friends. And, my personal favorite, eating lots of amazing food.
Christy and I often think to ourselves how we have it pretty darn good. And, yeah, we definitely did a couple things right.
So, what do these two kids do for their anniversary? We tossed around a few ideas, then Christy suggested we should just do what we do best; take a little adventure and explore something fun and new.
Perfect.
Our first idea was to have dinner at Paggi House or Wink (I forgot about the Carillon). But they were all closed on Sunday (the actual day of our anniversary). So after looking for other options, we decided just to do that nice dinner on the day before. So we booked it, and here we are…
One neat thing Wink does is make personalized menus for you, to commemorate a special event or occasion you may be sharing. After dinner, they give you that menu in an envelope (signed by all the chefs) so you can remember the day. Which is a very nice personal touch.
Dinner was great and we split two appetizers and two entrees with a bottle of wine.
We passed on dessert, because we had our anniversary cake waiting at home. Freshly made by Michelle’s Patisserie so we didn’t have to hide a top tier in our freezer for a whole year. I stuck one of our sparkly candles in it and each made a wish as it burned out.
The cake was awesome. Even better than we remembered because the last memories I had of it were from eating leftovers after a few weeks.
The next day we planned for a picnic at Hamilton Pool — a beautiful natural park, just outside Bee Caves, our friend Matt had told us about. We googled a few pictures of it, and both thought ‘we have to go there.’ No better day than today, and it really was a pretty sight…
The pictures we saw had a waterfall going over the cliff, but I’m sure the drought we’ve been having nipped that in the bud. Nonetheless it still was a sight to behold. The water was cold, but the relaxing, mildly numbing kind of cold. Not the OMG-get-me-the-heck-outta-here kind of cold like Barton Springs. So Christy and I relaxed in the waters with our little plastic glasses of wine under the sun. Life is good.
After our picnic, we drove back home and took a good nap. Nothing quite takes you out like a day in the water and sun.
We then went to Backspace, our favorite pizza in Austin BTW, for dinner.
I didn’t take any pics, because we’ve been here and taken pics before. So let me leave you with one from a previous occasion to help you visualize the awesomeness…
We ordered a couple pizzas knowing that it would be way too much. But we planned on taking some home and it was our anniversary, so why not do it up?
The place was packed and the pizzas took way longer than the usual, but once those amazing perfectly charred morsels of goodness were staring us in the face all was forgiven.
They gave us dessert and a round of drinks on the house due to the wait. So we finally tried the Ricotta Cheesecake. It’s served in a little mason jar, and topped with apples and graham crackers. A deconstructed cheesecake, if you will. I’m not usually a fan of ricotta, but then again I’ve only eaten the kind sold in tubs at the grocery store. This ricotta cheesecake is something else, and if you’re at backspace, I recommend you try it. Mmmmmazing.
Christy and I then went home. We relaxed and talked about what adventures our next year might bring. All I know is that as long as they’re with her, they’ll be the best.
